今年中秋,打算自己嘗試做做看月餅
找找資料,好像沒有想像中那麼難,所以就試試看囉
因為第一次做,好吧!就綠豆碰
參考了網路各家的食譜,加以調整
主要訴求是低油、低糖、健康
所以油脂不用酥油(有反式脂肪)、不用豬油(怕膽固醇太高)
內餡自己做,油量糖量都減少.....

這一類中式點心,包括綠豆碰、蛋黃酥、芋頭酥、燒餅....等等
都有一個特點,就是要製作油酥皮
油酥皮做的好,大概就成功大半了

一、油皮(每個約13g左右)
1.中筋麵粉140g (或低筋+高筋各70g)
2.糖 10g
3.無鹽奶油(先融化)40g
4.溫水35g

二、油酥(每個約12g左右)
1.低筋麵粉130g
2.無鹽奶油(先融化)65g

三、內餡(每個約30g左右)
1.地瓜泥 約250g
2.綠豆泥 約250g
3.肉鬆 適量


作法:
一、備料
1.將地瓜削皮切小片用電鍋蒸熟後,用大湯匙壓成泥,加入少量奶油、糖等攪拌均勻分成每個約30g備用(若要包肉鬆或肉燥、蛋黃等可包入)
2.綠豆仁加點水用電鍋蒸熟後,用大湯匙壓成泥,加入少量奶油、糖等攪拌均勻分成每個約30g備用(若太濕則再用鍋子炒乾,若要包肉鬆或肉燥、蛋黃等可包入)
3.做油皮:我將油皮材料放入麵包機中,使用麵團功能,攪拌到麵團表面變光滑,將麵團取出稍微再揉一下,用保鮮膜包起,鬆弛30分
5.接著做油酥:將材料放入大碗中,用筷子或刮刀拌勻,再用手搓揉至不黏手
二、製作
1.油皮分成每個約13g,油酥分成每個約12g,滾圓
2.油皮用手掌壓扁,包入油酥,滾圓
3.用桿麵棍桿開成橢圓,捲起,再桿開,再捲起
4.壓扁趕開後包入內餡,收口朝下
5.送進烤箱烘烤(時間視烤箱效能,我的烤箱約190度C烤約25分轉170度再烤5分)

電鍋煮熟後加糖、奶油移往瓦斯爐邊煮邊壓成泥

我將幾顆包入肉鬆(建議若加鹹的內餡時,綠豆沙要稍微甜一點,要不然會太淡沒味道)

油皮酥桿開,包入內餡(因為我用奶油,油量又比較少,動作又慢,所以都變乾裂開了...小失敗)

收口捏緊,修順,最後這一面向下當底

烤盤上鋪上烤布,放入包好的,稍稍壓扁

而且,我老爸以前是教食品加工的...
